DREAM DISHES | POOLSIDE PINEAPPLE SHRIMP

Ingredients:

☁️ 1 small red bell pepper, medium dice

☁️ 1 small green bell pepper, medium dice

☁️ 1 small white onion, medium dice

☁️ 1 lb. medium raw shrimp, peeled and deveined

☁️ 2 Tbsp Cornstarch

☁️ 1 jar jalapeno pineapple salsa (just dance)

☁️ 1.5 cups pineapple chunks, fresh or canned

☁️ 1 cup pineapple juice

☁️ 2 Tbsp cooking oil

* Can substitute shrimp for diced chicken or pork loin, just cook a little longer to ensure they are cooked thoroughly*

 

Instructions:

☁️ Heat oil In a large, deep skillet or pot over medium-high heat.

☁️ After oil is hot, add the peppers and onions, stirring to coat with the oil.  Sauté, stirring frequently, for about 5-6 minutes until they are slightly charred and softened but still retain some crunch.

☁️ Add in the peeled and deveined shrimp and stir.

☁️ When the shrimp begin to turn pink, turn them over and then sprinkle the cornstarch over the whole mixture.  Stir to coat.

☁️ Add in the salsa and pineapple juice. Allow to come to a simmer, bubbling around the edges.

☁️ Add the pineapple chunks and cook 2 minutes longer.

☁️ Serve hot over rice, or chill quickly and serve over salad greens.  Or even better, serve over half open pineapple and kick it poolside… enjoy!
