DREAM DISHES | SPICY SHRIMP TACOS w/ CREAMY AVOCADO SAUCE
The yin-yang of spicy salsa and cool avocado dip creates a delicious flavor combination, nestled in a warm, golden corn tortilla. Perfect for any fiesta!
For the Creamy Avocado Sauce:
☁️ 1 avocado
☁️ ½ cup Greek yogurt
☁️ ½ clove garlic minced
☁️ 1 lime juiced
☁️ ¼ cup cilantro minced + extra for serving
☁️ ½ tsp salt or to taste
Peel the avocado, remove the pit and quarter the fruit. Place the quartered pieces in a small food processor, adding the additional ingredients – yogurt, lime juice, minced garlic, minced cilantro and salt. Blend until smooth. Store in an airtight container until ready to use.
For the Grilled Shrimp:
☁️ 1 lb shrimp
☁️ 1 jar DATG Now or Never Salsa
☁️ 3 tbsp olive oil
☁️ 1 package small corn tortillas
☁️ Combine about half the jar of salsa with the olive oil and stir to blend. Mix in the shrimp and allow to marinate for at least 30 minutes.
☁️ Preheat the grill to a medium high heat.
☁️ Wrap the shrimp in two sheets of aluminum foil or place in a aluminum tin covered with foil.
☁️ Grill for about 10 minutes or until pink and cooked through.
☁️ While the shrimp is cooking, heat a skillet over high heat and drizzle with a little oil.
☁️ Warm the corn tacos until lightly golden, about 3-4 minutes per side.
☁️ Spread a thin layer of the Avocado Sauce in each warm tortilla. Add 2-3 pieces of grilled shrimp, drizzle with a spoonful of salsa and sprinkle with cilantro leaves. Repeat the process with remaining shrimp and tortillas. Serve immediately.
